Banana Cookie Recipe

As promised here is the banana cookie recipe : )

2 cups flour- you can add an extra 1/4 cup if you think batter is too wet
1 tsp baking soda
1/4 tsp salt
1 tsp ground cinnamon
6 T room temperature butter
1/2 sugar
1/2 brown sugar
1 egg room temperature
1 tsp vanilla
1 cup old fashioned oats
2 ripe bananas
chocolate chips (as many as you want :)

Preheat oven to 350
Cream butter and sugars. Add the egg (don't overmix) Add the vanilla. Mash the bananas with a fork and add to mixture. Sift all dry ingredients together. With mixer on low, slowly add dry ingredients. Mix until incorporated. At the very end you can stir in the chocolate chips.
Drop cookies onto a baking sheet lined with parchment paper. I use a cookie dough scoop. Very helpful to ensure even baking and uniform cookies. Bake for around 15-18 mins. Allow cookies to sit on baking sheet for 10 mintutes after you pull from oven and before moving to cooling rack.
